Density

Anton Paar's On-line brix monitor uses the resonant frequency of a vibrating U-tube to calculate the density of the liquid, which is then converted to °Brix by an evaluation unit. For carbonated beverages, a CO₂ transducer may also be connected to the system for the measurement of CO₂ and also for CO₂ compensation.

Sound Velocity

Density in beverages is closely correlated with the velocity of sound. Anton Paar's sound velocity transducers may be used to monitor °Brix on-line. They feature high resolution, repeatability, short response time, and they are virtually free from changing pressure, flow rate and viscosity.

Refractive Index

Refractive index is one of the characteristic properties of a material, and because it varies with density, it can be used to measure °Brix. Atago on-line refractometers are installed in-line, and measurement is not influenced by coloration, muddiness, viscosity or pressure.
