Since milk is a multi-component mixture and the density variations of raw milk are very high, it is not possible to determine the concentration of single milk components, like fat, directly from density measurement. Yet the fat content of milk can be determined from the density difference between standardised milk and skim milk.
Anton Paar density transmitters and density transducers are used for the accurate on-line monitoring and control of the milk fat content during standardisation.
Anton Paar density measurement uses a new type of oscillating U-tube. The instruments measure the change in oscillating frequency rather than the change in deflection used by other types of density meters; this provides a signal that is approximately 10x more sensitive than a change in deflection.
